A Legacy in the Americas

Tucked away in the sun-soaked valley of Parras de la Fuente, Coahuila, sits a winery whose story stretches back more than four centuries. Founded in 1597, Casa Madero is celebrated as the oldest winery in the Americas.

Spanish explorers once searched the desert for gold and silver, but what they uncovered instead was far more enduring: fertile soil, flowing springs, and native vines. With a land grant from King Philip II of Spain, vineyards were established, setting the stage for a tradition that has lasted more than 427 years.

In 1893, the winery was purchased by Evaristo Madero, grandfather of Francisco I. Madero, Mexico’s revolutionary president. From that moment forward, Casa Madero became a symbol not just of fine wine but of Mexican resilience and heritage.

Sustainability Rooted in Tradition

While Casa Madero’s roots run deep, its vision looks forward. The winery is a leader in sustainable winemaking:

  • Over one-third of vineyards are certified organic, and could become 100% organic in the near future.
  • Its wines are vegan-certified, crafted without animal products.
  • Recycled water systems and eco-friendly practices protect the valley that has sustained it for centuries (Casa Madero Official).

This dedication to sustainability has helped Casa Madero earn over 1,000 international awards, from gold medals in Europe to recognition in South America, elevating Mexico’s reputation on the global wine stage.

Casa Madero by the Numbers

  • 1893 – Purchased by the Madero family
  • 427 years – Continuous wine production
  • 1,000+ – International awards and medals
  • 100% – Goal for organic vineyards

A Perfect Pairing: Casa Madero and Thyme

The partnership with Thyme Restaurant began during a distributor visit where Daniel Milmo of Casa Madero and Ericsson Núñez of Thyme met. What could have been a routine tasting became something much more: a spark of collaboration between two brands equally committed to excellence.

Thyme, with its refined yet approachable dining style, has quickly earned a reputation as a culinary destination. Paired with Casa Madero’s wines, the restaurant’s dishes tell a complete story — of Mexico’s heritage, of artistry, and of passion for quality.

Looking Ahead

After more than four centuries of continuous production, Casa Madero has no intention of slowing down. Its goal: to remain a premium Mexican wine brand while expanding globally.

The collaboration with Thyme isn’t just about pairing menus and vintages; it’s about honoring the past while shaping the future. Together, they raised a glass to history, innovation, and the enduring artistry of fine wine.
